The Flying Pie Story

Katheryn Parker was 5 years old in 1974 when her parents, Connie and Dave, started making pizza in Northern California. They went on to open the first Flying Pie Pizzeria in Boise, Idaho in 1978. Over the years, they took their recipes and unique approach to pizza and opened other locations in Idaho, Utah, and Oregon. Many of the original stores are still open today. We’re proud to partner with the Oregon locations for all of our signature recipe items like the Italian Sausage (a secret Parker family recipe that you will only find in OR and WA) and our signature Flying Pie dough.
A self-proclaimed “Pizza Geek” Katheryn has been hand making pizzas here in Issaquah, Washington since 1997. She is an active member of the community, often donating pizza tours and experiences to support local charities. She is also quite famous in the Issaquah School District for her “Art of Making Pizza” enrichment classes that she hosts at many of the aftercare programs.
Our Pizza Dough is homemade and hand-rolled daily. Fresh vegetables are cut and prepared every day. We use only 100% whole milk Mozzarella, Provolone and Romano Cheese. Our meats are of the highest quality available. Our goal is to serve you the finest products and create an enjoyable atmosphere to serve you. Come in and enjoy the best pizza Issaquah has to offer.
